Pancakes!

Oh how I love breakfast for dinner and dinner for breakfast.  For some reason a salami sandwich with lots of good mustard sounds so appetizing in the morning, and pancakes or french toast is perfect for supper! 

Now these are some pancakes to be reckoned with.  This is my “go-to” pancake recipe and I truly think they are the best pancakes I’ve ever tasted. And, you can add stuff like blueberries, chocolate chips, toasted pecans, or even <<shudder>> raisins (please don’t add raisins).  I know a lot of folks who don’t like sour cream, so I just don’t tell them there’s sour cream in the pancakes until after they try them (you’d never know).  Now I know you might argue that the same could be said of raisins, but raisin are lumpy and feel icky on your tongue. Just so you know.

My dear Papa died from lung cancer when he was 50.  He had a wonderful oncologist who shared this pancake recipe with our family, and we immediately fell in love.  Let me know what you think!  And don’t forget the real maple syrup – yum!

 

You’ll need buttermilk, sour cream, salt, baking soda, flour and an egg.

Dump it all in a bowl!

Stir it up good…

 Pour it on a heated griddle (I like to use a 1/3 cup measure)

Use the bottom of the measuring cup to spread it out a little…

 

Let ’em cook until they get bubbly on the top, then flip ’em over.

Mmmmm.

Buttermilk Pancakes 

Ingredients:

  • 1 egg, slightly beaten
  • 1 cup sour cream
  • 1 cup buttermilk
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Directions:

  1. Preheat griddle or skillet to 350°.
  2. Put all ingredients in a mixing bowl. Stir together until combined.
  3. Pour about 1/3 cup per pancake on the griddle, and use the bottom of the measuring cup to spread into a circle.
  4. Cook until bubbles form, flip, and cook a minute or two longer.
  5. Serve with butter and maple syrup.
  6. Makes about 10 4″ pancakes.
